About the hotel

Cromlix is a five-red-star Victorian country house hotel set in 34 acres of secluded Stirlingshire woodlands, owned by Kim and Andy Murray. With a Michelin Key and three AA Rosettes, it is one of Scotland's most refined luxury retreats, welcoming an international high-net-worth clientele. The property is reopening in May 2026 following an exciting new chapter of transformation, and the kitchen is building a senior brigade to deliver a new standard of contemporary Scottish fine dining.

The work

  • Support the Head Chef in the day-to-day running of the kitchen and service
  • Lead and inspire the kitchen brigade during service and across the full day
  • Deliver consistency, precision and quality on every plate
  • Maintain uncompromising standards of food safety, hygiene and HACCP compliance
  • Contribute creatively to menu development and seasonal changes
  • Mentor and develop junior chefs and commis through structured coaching
  • Step into leadership during the Head Chef's absence
  • Build strong relationships with Scottish producers, growers and suppliers
  • Oversee mise en place, pass standards and service flow across covers
  • Control food costs, GP and waste in line with agreed targets

This role is for you if…

  • You have proven Sous Chef experience at rosette or Michelin-recognised level
  • You lead a brigade by example and are calm, consistent and precise under pressure
  • You have a deep respect for ingredients, seasonality and craft
  • You enjoy mentoring the next generation of chefs
  • You are excited to help shape a kitchen reopening at a luxury country house
