The work
- • Support the pastry section across breakfast, lunch, afternoon tea and dinner
- • Prep doughs, sponges, mousses and ice creams under section guidance
- • Plate desserts and afternoon tea pieces to Firmdale standards
- • Bake breads, viennoiserie and breakfast pastries each morning
- • Maintain stock rotation, mise en place and section labelling
- • Champion HACCP, allergen and food safety compliance
- • Liaise with restaurant and afternoon tea teams on timings
- • Keep section, fridges and storage immaculately clean and organised
- • Step in across hot and cold sections when needed
- • Build pastry skills under a strong Pastry Sous and Head Pastry Chef
