About the hotel

Watergate Bay Hotel is an independently owned beachside hotel with two miles of Atlantic-facing sand on its doorstep, on the north Cornwall coast just outside Newquay. With 71 rooms and apartments, multiple restaurants including the celebrated Zacry's, a swim club, surf school and the relaxed Beach Hut on the sand, Watergate is the original Cornish coastal lifestyle hotel. The hotel attracts a loyal guest base of families, surfers, food lovers and weekenders drawn to its laid-back-but-considered hospitality and sense of place.

The work

  • Run your own section across breakfast, lunch and dinner services
  • Cook seasonal, produce-led Cornish food to a consistent standard
  • Work closely with the Head Chef on menu evolution and specials
  • Build relationships with Cornish growers, fishermen and suppliers
  • Mentor and support commis chefs and apprentice chefs on your section
  • Maintain uncompromising HACCP, allergen and food safety standards
  • Manage section ordering, prep lists and waste discipline
  • Cover adjacent sections and outlets across the hotel as needed
  • Support events, weddings and festivals across the bay throughout the year
  • Champion a calm, generous, hard-working kitchen culture

This role is for you if…

  • You have proven Chef de Partie or strong senior commis experience
  • You take pride in produce, plating and seasonal Cornish cooking
  • You are calm, organised and consistent under service pressure
  • You are a generous teammate who lifts the brigade around you
  • You are excited to live and cook on the Cornish coast

  • You prefer city-centre fine dining only
  • You are not available for evenings, weekends and peak season
  • You are uncomfortable in a multi-outlet hotel kitchen
