Hambleton Hall is a Michelin-starred Relais & Châteaux country house hotel set in 17 acres overlooking Rutland Water in the East Midlands. The work
- • Partner with the Head Sommelier to deliver an exceptional wine service across all dining experiences
- • Advise guests on wine selections and food pairings with confidence and discretion
- • Support cellar management, stock rotation and inventory accuracy
- • Assist with wine ordering, invoicing and supplier liaison
- • Contribute to wine list development and seasonal updates alongside the Head Sommelier
- • Lead staff wine training sessions and nurture the team's knowledge of the list
- • Care for after-dinner spirits, fortified wines and digestifs service
- • Maintain pristine cellar conditions, glassware and service equipment
- • Deputise for the Head Sommelier on days off and during peak service
- • Continually develop your own knowledge through WSET studies and tastings
This role is for you if…
- • You have prior experience in wine service or a fine-dining hospitality role
- • You hold WSET Level 2 or 3 (or are working towards it — sponsorship is available)
- • You have a genuine passion for gastronomy, wine and service
- • You are polished, articulate and confident conversing with discerning guests
- • You thrive in a Michelin-level environment where detail is everything
- • You are eligible to work in the UK (sponsorship not available)
This role might not be for you if…
- • You prefer casual or high-volume F&B environments
- • You are not available to work evenings, weekends and bank holidays
- • You are uncomfortable working in a structured, fine-dining service
- • You have no interest in formal wine study and development
