Ellenborough Park is a 16th-century country house hotel and spa set in 90 acres on the edge of Cheltenham, with sweeping views over the Cotswolds and Cheltenham Racecourse. The 61-bedroom hotel is home to the AA Rosette Beaufort Dining Room and the relaxed Horse Box bar, supported by a destination spa and elegant event spaces. The work

• • Lead service alongside the Head Chef across the Beaufort Dining Room
• • Run sections, develop dishes and deputise in the Head Chef's absence
• • Drive consistency across breakfast, lunch, dinner, banqueting and weddings
• • Coach and develop a brigade of CDPs, demis and commis chefs
• • Own ordering, stock, GP and waste targets across your shifts
• • Maintain uncompromising HACCP, allergen and food safety standards
• • Build close working relationships with Cotswolds producers and suppliers
• • Support seasonal menu development and dish refinement
• • Lead kitchen pre-service briefings and post-service debriefs
• • Champion a calm, professional and respectful brigade culture

This role is for you if…

• • You have proven Sous Chef or strong Junior Sous experience in a rosette kitchen
• • You are a confident leader who lifts the brigade around you
• • You are commercially numerate on GP, ordering and labour
• • You take real pride in produce, technique and presentation
• • You enjoy a busy country house environment with weddings and events

• • You are not available for evenings, weekends and bank holidays
