About the hotel
Charlotte Street Hotel is one of eight individually designed Firmdale hotels in central London, set in the heart of Fitzrovia just north of Soho. With 52 individually designed bedrooms and suites, the popular Oscar Bar & Restaurant, a private screening room and refined event spaces, the property has long been a favourite of Bloomsbury's creative descendants — film, fashion and media guests drawn to Kit Kemp's signature design and the hotel's intimate London townhouse feel.
The work
- • Run a section confidently across busy lunch and dinner services
- • Deputise for the Sous Chef on shift, leading the line in their absence
- • Drive consistency of recipes, plating and Firmdale standards
- • Train and mentor Commis and Demi Chefs across the kitchen brigade
- • Manage mise en place, stock rotation and section prep daily
- • Liaise closely with restaurant and bar teams on dietaries and timings
- • Support the Head Chef on menu development and seasonal changes
- • Maintain immaculate kitchen, fridge and section hygiene throughout shift
- • Champion HACCP, allergen and food safety compliance
- • Cover sections across breakfast, lunch, dinner and afternoon tea
This role is for you if…
- • You have CDP or Junior Sous experience in a quality hotel or restaurant
- • You are calm, organised and lead by example on the line
- • You enjoy a varied menu spanning all-day dining and afternoon tea
- • You are passionate about training and developing junior chefs
- • You take real pride in seasonality, sourcing and consistent plating
